Why is it important for the yeast to convert pyruvate to CO2 and ethanol?

It is important for yeast to go through the fermentation process because this essentially allows for electron recycling so it can go through glycolysis(aka substrate level phosphorylation) again without the need of oxygen (ie in anaerobic conditions)
